There is an advanced setting in controls that allows you to "cushion the blow" so to speak, of stomping on the gas pedal. It's called Input Momentum and I've found it very helpful in getting out of the pits and off the slow corners without a throttle induced spin...
I set mine to 60%. I can still get wheel spin exiting the pits but it's much easier to anticipate and control. The downside is that throttle response is just that tiny bit delayed. But for me, it's worth it.
